Watermelon-Feta Salad-(gleaned from an older Southern Living Mag)
This is a family favorite that I am sharing because it's my absolute favorite summer salad to make-and it's really easy!! If you have a chopper (like from Pampered Chef) your kids can get involved and make this a fun opportunity to teach and learn!
Ingredients: you can substitute, add, delete (we leave out the olives) as you choose
1 1/2 cups diced seedless watermelon
3/4 cup diced english cucumber
1/4 cup coursely chopped pitted olives
1/4 cup diced red onion
2 tablespoons marinade (recipe below)
1/4 cup crumbled feta cheese
marinade:
1 tablespoon fresh lemon juice
1 tablespoon vegetable oil
1 tablespoon (give or take) chopped fresh flat leaf parsley (I have substituted cilantro too, yummy!)
1 teaspoon dried oregano
pinch salt
pinch pepper
pinch ground cumin (optional)
wisk the marinade in small bowl
add all ingredients together and mix it up! So delicious and easy. My kids love to help me make this!!
Cucumber-Mango Salad

Ingredients
1-1/2 mangos - peeled, seeded and diced
1/2 cucumber - peeled, seeded, and diced
1 jalapeno peppers, seeded and finely chopped
1/2 large onion, finely diced
1/2 clove garlic, minced
2 tablespoons chopped fresh cilantro
1-1/2 teaspoons lime juice, or to taste
salt and pepper to taste
Mix first 6 ingredients together in bowl. Add lime juice, salt and pepper to taste (consider adding diced pineapple for some sweet flavor as well!) and allow to chill at least one hour in refrigerator)
Enjoy with tortilla chips or great with toasted pita bread as well!
Asian Grilled Shrimp Recipe
1 tsp. Asian sesame oil
1 tbsp. honey
2 tbsp. soy sauce
1 tbsp. rice wine vinegar, vodka or sherry
1 tbsp. lemon juice
1/4 tsp ground ginger
1 clove garlic, minced
1 pound large shrimp, shelled
Instructions
In a bowl, mix the sesame oil, honey, soy sauce, rice wine vinegar, vodka or sherry, lemon juice, ginger and garlic. Add the shrimp, turn to coat well and marinate for 1/2 hour or while you heat the coals or preheat the broiler. Grill for 2 to 3 minutes to a side. Makes 4 servings.
